A Healthier Family and a new recipe!

As this new year begins I continue on my journey for a healthier family.  Most of it falls on my shoulders which at times can be stressful, yet I will continue on!  I am trying to slowly switch over to getting out most of the processed foods in our home.  
This takes homework and time.  My goal is to take Saturday's maybe and bake all day. Homemade breads,muffins,etc. and prepare other meals.  I am also educating myself on the art of sales and couponing. 
At times again, overwhelming, but I know with God all things are possible! ;-)  He is giving me the wisdom...He will provide the grace.

My verse for the month is Psalms 1:2-3:

2-They delight in the law of the Lord, meditating on it day and night.
3-They are like trees planted along the riverbank, bearing fruit each season.  Their leaves never wither and they prosper in all they do.


If I am a lover of God's word, I will prosper in all I do.   






Also a recipe for you...I just tried it and it was a hit!

Chocolate Zucchini Bread

For topping:
2 Tbs. Brown sugar
2 Tbs. white sugar
1/2 tsp. cinnamon

For bread:

2 cups flour
2 tsp. cinnamon
1 1/2 tsp. baking soda
1/2 tsp. salt
6 Tbs. unsweetened cocoa powder
1/2 cup canola oil
1 cup sugar
1/4 cup brown sugar
3 whole eggs
2 tsp. vanilla
1/2 cup sour cream
3 cups grated zucchini
3/4 cup mini chocolate chips

Preheat oven to 350 degrees.  Butter and flour two loaf pans,set aside.    Mix the topping ingrediants, set aside.
For bread, whisk together flour,cinnamon,baking soda,salt and cocoa powder, set aside.  
With mixer beat oil,sugar,brown sugar,and eggs until fluffy(2 min.)    Add vanilla and sour cream,mix.
Fold in zucchini and chocolate chips.  Then add flour mixture a little bit at a time mixing it in with the egg mixture.
Divide batter into pans and pour sugar topping over top.  Bake 50-60 min.

Enjoy!  It smells up the whole house ..you'll hardly be able to wait to eat some!

It's been awhile....

Been awhile since I last posted...alot has gone on since then..mainly our move.  
I've been enjoying the new house and country living!

Recently I painted a wall in the kitchen with black chalkboard paint. The kids are loving it!  I want the house to look clean and orderly,but also want it to be fun.    Anyone else have an experience with chalkboard paint yet?
